What's a Pet Nat?

A couple three years ago, petillant naturel (or pet-nat, for short) wines were having a moment. They were the latest hot thing in the ongoing (and possibly eternal) efforts to de-stodgify and de-snobbify wine. As with all such fads, pet-nat is no longer dominating the headlines of the wine press, but that doesn't mean it's not still out there. In fact, it's pretty easy to find.

But what, exactly, is it? Simply put, it is sparkling wine made using the "ancestral method", which means that it is bottled while primary fermentation is still ongoing.
