Described by some as "what happens when you distill the ever loving shit out of something so as to make other things alcoholic," it has over time been both the gritty workhorse and the celebrated darling of the industry. Given that you can make it from nearly anything that contains fermentable sugars, it has a range of subtle background flavors and textures that distinguish brands and distilling traditions from one another.
